sour cream
Omit for dairy free

freshly chopped chives

green onions
thinly sliced, white and green parts divided

shredded cheddar
or Daiya cheese

bacon bits
Ensure gluten free
salt
to taste
ground black pepper
to taste
Instructions
Using a fork, poke potatoes
Place in microwave and use "potato" button/setting for number of potatoes used
Remove from microwave and sprinkle with cheese
Top with scallion greens, bacon and remaining ingredients

Omit sour cream and replace cheddar cheese with Daiya cheese to make dairy free.
Serve with salad!
