Loaded Baked Potatoes

Ingredients

  • 4 large russet potatoes
  • 1/4 c. butter or margarine
  • 1/4 c. sour cream Omit for dairy free
  • 1/4 c. freshly chopped chives
  • 2 green onions thinly sliced, white and green parts divided
  • 3/4 c. shredded cheddar or Daiya cheese
  • 1 tbsp bacon bits Ensure gluten free
  • salt to taste
  • ground black pepper to taste

Instructions

  • Using a fork, poke potatoes
  • Place in microwave and use "potato" button/setting for number of potatoes used
  • Remove from microwave and sprinkle with cheese
  • Top with scallion greens, bacon and remaining ingredients

Notes

Omit sour cream and replace cheddar cheese with Daiya cheese to make dairy free.
Serve with salad!
