Heat Dutch oven
Add olive oil.
Add sausage, and cook until browned (~2 minutes).
Add onion, and bell pepper.
Season with salt and Cajun seasoning.
cook until soft veggies are soft (~8 minutes).
Add the can of tomatoes with juice, garlic, chicken broth, bay leaves, and thyme leaves.
Stir in the rice.
Simmer for 20 minutes (or until rice is cooked to your liking).
Remove from heat.
Let stand 5 minutes.
Discard the bay leaves before serving.
