Camp Dutch Oven Jambalaya

Ingredients

  • 1 tablespoon olive oil
  • 14 oz smoked sausage cut into ¼-inch thick slices
  • ½ large onion chopped
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • ½ teaspoon Cajun seasoning
  • 1 cup uncooked white rice
  • 14.5 oz diced tomatoes, with juice
  • 1 tablespoon minced garlic
  • 16 oz chicken broth
  • 3 bay leaves
  • ¼ teaspoon dried thyme

Instructions

  • Heat Dutch oven
  • Add olive oil.
  • Add sausage, and cook until browned (~2 minutes).
  • Add onion, and bell pepper.
  • Season with salt and Cajun seasoning.
  • cook until soft veggies are soft (~8 minutes).
  • Add the can of tomatoes with juice, garlic, chicken broth, bay leaves, and thyme leaves.
  • Stir in the rice.
  • Simmer for 20 minutes (or until rice is cooked to your liking).
  • Remove from heat.
  • Let stand 5 minutes.
  • Discard the bay leaves before serving.
