This is the best recipe that we have found to date for great everything free (Egg free, Gluten free, Soy free, milk free, and tree nut free) pancakes.
*Update* In our quest to find the best allergy free pancake, we have come across a much better, fluffier, yummier recipe. It’s our Gluten, Dairy, and Egg Free Fluffy Pancakes! recipe. We’ve also altered it to make a super yummy banana pancake which is wonderful as well.
Ingredients:
2/3 cup Rice Flour
3 Tbsp + 1 2/3 tsp Potato Starch
1 Tbsp +2 1/3 tsp Tapioca Flour
2 Tbsp sugar
1 Tbsp baking powder
1/4 tsp salt
2 Tbsp Earth Balance “butter”
2/3 cup rice milk (add a little more to desired consistency if you want)
1 1/3 eggs via egg replacer (2 tsp egg replacer, 2 Tbsp + 2 tsp warm water)
1/2 tsp vanilla
Mix flour, sugar, baking powder and salt in a large bowl. Cut in earth balance until a crumb structure is formed. Whisk egg replacer and water using an electric whisk. Add wet ingredients to dry and mix with a whisk until relatively smooth.
