Once again I was looking for another way to cook salmon other than the default and came across this recipe at cooks.com. But as always I modified it slightly. It was really good! I served this with brown rice cooked in turkey broth, and sauteed cucumber.
Ingredients
3 Salmon fillets (6oz each approx)
Salt
Ground black pepper
1 -2 Tbs dark brown sugar
Dijon mustard
Directions
Pat dry apply, salt and pepper liberally and rub into meat on all sides. Brush mustard all over fish and then coat fish with brown sugar.
Grill over direct heat turning once (3 to 5 minutes). Check for doneness by pushing on fish – it should flake. Let rest for several minutes.
