Camping?!?!?!?! What are we going to eat? When most of the normal staples of camping food have ingredients that contain stuff that we have allergies to, what are we going to do? COOK! I prepared our dishes ahead of time and froze them so that they would stay cold in the ice chest. We camped at the GRAND PRIX area of Laguna Seca (Mazda Raceway). We awoke Saturday morning to the sound of old time race cars racing around the track. Sunday we went into Monterey and went to the Monterey Bay Aquarium, which was an all day event! My son loved it!
This is what our menu looked like:

The problem with most of these, they have corn of one variety or another (corn syrup, corn starch, etc).I have linked the recipes to the dishes that I had to modify to allow all of us to eat above.
